Your Role
The Sous Chef supports the Executive Chef in the day-to-day operation of the Kitchen and Stewarding departments and assumes leadership of the culinary team in the Executive Chef’s absence. This is a hands-on leadership role responsible for ensuring the culinary vision is consistently achieved through strong execution of menu standards, food quality, presentation and guest experience. The Sous Chef works collaboratively with the Executive Chef to translate culinary direction, recipes and standards into clear expectations for the team, while coaching and developing team members and providing effective leadership across all kitchen stations.
The Sous Chef is primarily responsible for:
Leading daily kitchen operations in partnership with the Executive Chef, ensuring consistent execution of Sahni’s culinary vision, recipes, presentation and service standards.
Taking an active, hands-on role during service by leading the culinary team and promoting smooth communication between preparation, line and front-of-house teams.
Supporting the Executive Chef in maintaining and developing the culinary identity of the hotel’s food and beverage outlets, including Sahni, while contributing ideas that align with each concept and the overall hotel vision.
Demonstrating strong culinary knowledge and confidently executing and teaching regional cuisines, ingredients, techniques and cooking methods.
Collaborating with the Executive Chef to refine recipes, plating standards and production methods based on service feedback.
Training, coaching and developing culinary team members through hands-on instruction, constructive feedback and ongoing skill development.
Leading by example and working alongside Cook 1, Cook 2, Cook 3, Prep Cook and Stewarding team members.
Assigning daily responsibilities and providing clear direction based on business levels, reservations and service requirements.
Identifying opportunities to enhance food quality, efficiency, consistency and overall kitchen execution.
Supporting food-cost targets through effective portion control, waste management, recipe adherence and responsible product utilization.
Conducting or supporting pre-service meetings to communicate reservations, menu changes, special events and operational priorities.
Maintaining clear communication with the Front-of-House team regarding service pacing, menu availability, allergies and special requests.
Ensuring kitchen areas consistently meet established food safety, sanitation, cleanliness and organizational standards.
Supporting compliance with all hotel, provincial and company policies and procedures.
What We are Looking for...
Minimum of three years of professional culinary experience, including demonstrated leadership experience in a high-volume kitchen.
College or university diploma in Culinary Arts, Hospitality Management or a related field; Red Seal certification is preferred.
Strong knowledge of cooking techniques, food preparation, plating, recipe execution, food safety and sanitation standards.
Hands-on leadership approach with the ability to supervise, train, motivate and develop culinary team members.
Experience with inventory management, ordering, portion control, food costing, waste reduction and scheduling.
Experience with menu development and service design is considered an asset.
Strong communication, delegation, problem-solving and creative-thinking skills.
Ability to collaborate effectively with the Executive Chef, culinary team, front-of-house team and hotel management.
Ability to remain composed, professional and solutions-focused in a fast-paced environment.
Experience working in a unionized environment is considered an asset.
Proficiency in Microsoft Office and other relevant computer applications.
Flexibility to work evenings, weekends and holidays, including occasional Manager-on-Duty shifts.
